Little by little, the watercress harvest grew and horse-drawn carriages transported it to the train stations and the Halles de Paris, the «belly» of the city.
Watercress farming has not changed much, despite modern techniques and efficient greenhouses, because watercress is still grown immersed in spring water in the hollow of ditches.
Today, Vodkress combines the purest vodka with the noblest wa- tercress for an artisanal recipe that perpetuates
the terroir and French gastronomy.
